Your menu is likely set for your 4th of July cookout or picnic…but what about a weekend brunch? Try a twist on steak and eggs – flank steak topped with eggs poached in salsa. My Recipe For Simple Salmon

This Salmon recipe can just as easily be made on the grill.
Layer each filet individually with your ingredients onto foil, loosely making a “foil packet”. Place packet on prepared grill (low-medium), cook until desired doneness (20-35 minutes), remove packet from grill and let rest before opening to serve.

Recipe: Simple Salmon

Servings: 2-3 servings

Cook Time 35 Minutes:


This is my go-to salmon recipe. Quick, easy and tasty; perfect for a healthy meal in a hurry. Cook and Enjoy!


2 – 3 4 oz salmon filet

2 medium tomatoes

1 large sweet onion

1 medium lemon

salt, pepper



Slice tomatoes, onion and lemon into thin rounds. (About 1/4 inch thick)

Line a baking pan with foil.

Layer ingredients onto baking sheet: Lemons, Salmon, skin side down, Salt & pepper to taste, Onions, Tomatoes

Place a small pat of butter on top of each filet.

Cover baking dish with foil.

Bake 450º for 20-25 minutes.

Remove from oven. Carefully open foil on one corner to let out the steam.

Let rest for 5 minutes before serving.

My Recipe For Easy Apple Pie

Recipe: Easy Apple Pie

Servings: 1 pie

Cook Time 1 Hour 10 Minutes:


Never fail apple pie! Delicious and easy. Bake and enjoy!


2 ½ lbs apples

1 tsp cinnamon

1 tsp sugar

1 cup white sugar

¾ cup butter

1 cup flour

1 large egg

1 pinch salt


Melt butter and allow to cool.

Core and peel and chop apples. Arrange in one layer in pie pan or baking dish.

Sprinkle apples with 1 tsp each of cinnamon and sugar.

Mix egg and sugar, stir in melted butter, add salt and flour. Pore mixture over apples just to cover top.

Bake 350º 60-65 minutes

My Recipe For Spicy Garlic Beef Kabobs

A great make-ahead menu item.
Prepare 1-2 days ahead, skewer, grill and serve in minutes!

Recipe: Spicy Garlic Beef Kabobs

Servings: 2 serving


2 4 oz filets

2 large peppers

1 large onion

1 cup tomatoes, cherry or grape

6 cloves garlic

2 Tbsp vidalia onion hot sauce

¾ cup Worcestershire sauce

black pepper



Place garlic, black pepper, vidalia onion hot sauce and Worcestershire sauce into a sealable container.

Cut filets into 2 inch cubes.

Place in marinade.

Cover and shake a bit to coat the meat Refrigerate at least one hour (or overnight).

*note: if using wooden skewers, place in a container and cover completely with water now to avoid burning them later*.

While filets are marinating, chop peppers and onions into 2 inch cubes, set aside.  (vegetables can also be marinated overnight for easy next day preparation)

When you are ready to cook:

Prepare grill, heat to medium heat.

Remove meat from marinade, place alternately on skewers with peppers, onions and tomatoes.

Perfect Beef Burgers

Add some of your favorite toppings into the meat mixture before forming into patties.
Crumbled bacon with shredded cheddar, crumbled blue cheese.
Roll the edges of the burger patties in some coarsely ground black pepper.
